veg-cheese uttapam
This modified onion uttapam i make to satisfy my daughters as they like cheese very much.
Ingredients for 8 middle sized uttapam
Simla Mirch-2(big sized)
tomato -2
Onion -1
ginger -1cm
green chillies-2
green coriander-one small bunch
Pottato -1(boiled with little salt)
Method:
cut the vegetables to very fine and mix it with little salt and keep aside
smash the boiled potato and keep aside
Take a dosa pan put litle oil or ghee and spread the dough thinly
make a thin layer of above said vegetable .sprinkle the boiled potato and cover it with lid and let it fry in low flame .Once the dough becomes dry reverse and add little oil from the sides and keep it for another 2-3 minutes and now remove the dosa from the pan and add scrapped cheese or paneer if u like and serve with green chutney and tomato sauce .(the photo given above is without the cheese as my hero does not like it)

What is this rekha mam...uttappammai kannuleye kaamikka mattengareenge(u r not willing to show this oothappam in bright light)....haha...did u prepare this in midnight and wake up ur hero and served it in d dark as a candle light (mid-night) dinner.....haha...anyways thanks for sharing d recepi....see today in our house also oothappam...both sweet (jaggery)and saada oothappam...

july i forget to tell u i that do this kind of experiment(research) in my kitchen and my children always tells me that better u try on ur hero...ah ah ...and for me it is fun to see the expression of my hero' face ....The name given to this dish is also mine hope u like it

Dr.Rekha, do you conduct meditation classes or have you written any article on Meditation. I saw an english article in a news paper long back (2 months ago) by Dr. Rekha Shetty (20 minutes of meditation for employees will improve the efficiency of them - by Mind Guru Dr.Rekha Shetty) Is that you?

No dear that must be from some great mind guru probably from chennai .I do take meditation session in class room whenever i take lecture for our field staff just to relax and improve their concentration
