Ragada Patties

For the patties : Potatoes 6 boiled and mashed, 2 clices of bread, corn flour for binding, pudina few leaves, ginger and green chillies minced 2 tsp, coriander leaves few, chilli powder 1/2 tsp, cumin pdr 1/2 tsp, chat masala 1/2 tsp, chat masala 1/2 tsp, lime juice 1/2 tsp, salt to taste. For the Ragada: 1 cup white peas soaked overnight and boiled, 1 small onion chopped finely, 1 tsp ginger and chilli paste, 1/2 tsp haldi, 1/2 tsp red chilli powder, 1/2 tsp cumin powder, 1/2 tsp garam masala pdr, 1/2 tsp coriander powder, 1 tbsp Jaggery, 1 tbsp tamarind paste, 1 big tomato, salt to taste, lime juice 1 tbsp. For garnish: Green chutney, tamarind chutney, onion, sev, deseeded and finely chopped tomatoes, coriander leaves, chat masala, yogurt sweetened with sugar.

Ingredients and method

1. Soak peas overnight and pressure cook them till soft.
2. Heat oil and saute onion till they are translucent. Add the ginger-chilli paste (can add garlic, I avoided :shy: ).
3. Add all the dry powders and jaggery and saute for a minute.
4. Add tomatoes and salt and saute for a few minutes and then add the cooked peas to this.
5. Bring to a boil and simmer for 10 minutes.
6. Switch off the stove and add the lime juice.

This the Ragada.

Patties preparation:
1.Dip bread in water and squeeze the water from them.
2. Mash boiled potatoes in a vessel and add the bread to this.
3. Add all the dry ingredients to this.
4. Add the coriander and pudina leaves.
5. Add the ginger and green chilli paste.
6. Add salt and lime juice.
7. Make big patties and shallow fry them.

Place on e patty in a bowl/plate. Pour over this the ragada and garnish with tarmarind chutney, onion, green chutney, yogurt, tomatoes, coriander leaves, and chat masala sprinkled on top. Just make sure the ragada is hot while serving.

You know, a form of poetical metre, used particularly in yakshagAnas, is called ragaDa in telugu and ragaLe in kannaDa. When I was once looking for information for ragaDa, google was throwing at me these ragada patties Smile Regards! - mOhana
