maddur is a place name, which is on the way to Mysuru from BengaLuru and this delicacy is very famous there. This hot & crispy vaDe makes a good evening snack goes well with hot coffee.
<strong>Ingredients: </strong>
Rice flour - 1/2 cup
Maida (all purpose flour) - 1 cup
Groundnuts split and made as dal - 4 table spoons or as needed
Onion - 2 medium sized
Green chilles - 4-5 as per taste
Coriander leaves - chopped 2-3 table spoons
Curry Leaves - chopped 2 table spoons
Jeera/ Cumin seeds - 2 t-spoons/ as per taste
Oil - 1/2 litre
Salt to taste
Ingredients and method
Take a mixig bowl, add rice flour, maida, salt and mix well. Keep oil on stove to heat, when warm take 4-table spoons of oil and put into the mixture, mix well. Now add finely chopped onions, jeera, coriander, curry leaves and mix well. ensure while mixing move the hands in one direction only. This enables to add more fluffyness and the vaDe becomes crispier. Most often due to water in onion and oil is more enough to get the vaDe dough ready. If not you can add few spoons of water.
Now take lemon sized balls and flatten it and deep fry in oil, till becomes light yellowish color.
Enjoy with coconut chutney or tomato sauce or just as it is .....Happy cooking
